Ingredients

4 tablespoons unsalted butter
1/3 cup diced tri-pepper mix (fresh diced green, red, yellow bell peppers)
1 teaspoon minced garlic
1/4 cup sour cream
1/4 cup cream of coconut
1 1/2 teaspoons jerk seasoning
8 oz large peeled/deveined shrimp, tails removed
1 cup precooked bacon pieces
1/4 cup presliced green onions
2 cups precooked white rice, optional

Steps

  1. Preheat medium sauté pan on medium-high 2–3 minutes. Place butter in pan to melt. Add peppers and garlic; cook 2–3 minutes or until softened.
  2. Reduce heat to medium. Stir in sour cream, cream of coconut, and seasoning; cook 1 minute, stirring occasionally, until blended.
  3. Add shrimp to pan; cook 1–2 minutes on each side and until shrimp turn pink and opaque. Stir in bacon; remove from heat and top with green onions. Serve over rice, if desired.
