        Now is when many of my snook spots are also holding snapper.  Mangrove snapper to be exact, but they are not always in the mangroves. They can also be found along rocky shorelines or even out in open grass beds holding on sandy potholes. The same baits, same tackle, and same techniques work for both the snook and the snapper at the same time. Only once have I booked a snapper trip and had an individual complain because he was also catching snook. The bonus of catching snapper on a catch-and-release snook trip is the addition of a fresh fish dinner.  The last snapper I brought home I left whole while only gutting and scaling them.  Scoring the flesh, they were marinated in a mixture of coconut milk, soy sauce, and limejuice.  Then the whole fish was breaded with panko and fried.  The difference in taste in cooking the whole fish on the bone is remarkable.  Serve it with rice and beans and a side of freshly made mango salsa and you have the perfect summer meal.
