Ingredients

1 tablespoon blackening seasoning
1 1/2 lb grouper fillets (3/4-inch thick)
1/4 cup mayonnaise
3 tablespoons ranch dressing
4 hoagie rolls

Steps

  1. Season grouper. Combine mayonnaise and ranch dressing; set aside.
  2. Preheat grill to medium. Grill fish 4–5 minutes on each side and until opaque and separates easily.
  3. Place grouper in rolls; top with mayonnaise mixture and your favorite sandwich toppings.

Other Preparation Methods

  • Bake: Preheat oven to 400°F.Place 1 1/2 lb grouper in oiled baking pan and season with salt/pepper; bake 8–10 minutes or until opaque and separates easily.
  • Pan Fry: Dip 1 1/2 lb grouper in beaten egg, then coat with bread crumbs; shake off excess. Preheat 3 tablespoons oil in large sauté pan on medium-high. Cook fish 3–4 minutes on each side and until golden and fish separates easily. Season with salt and pepper.
