Pompano it is no secret, are one of our best fish to eat.   This is one way I will do it occasionally that will work with other fish.

This one is very simple.    You take a full stick of butter.   You melt it in the pan on the stove top.    You take your boneless, skinless pompano fillets and you roll them in seasoning of your choice (I like Italian seasoning or something spicier like jalapeno powder or Old Bay).       Drop the fillets in the butter and flip the fish about four times.

Cut the heat and let the fillets sit in the butter for five minutes and serve.

Heavy butter taste, the seasonings usually cook into the meat pretty well.
